Vegetarian Stuffed Zucchini

Ingredients

  • 3 Medium Zucchini
  • 1/2 Cup Mozzarella cheese Shredded
  • 1 Cup Ricotta cheese I used low fat
  • 1 Cup Cottage cheese I used 2%
  • 1 Cup Kale Chopped
  • 1/4 Cup Parmesan cheese Shredded
  • 1/8 Tsp Pepper
  • 1/8 Tsp Garlic powder
  • 1/8 Tsp Salt
  • 1 Cup Marinara sauce

Instructions

  1. Preheat oven to 400 degrees F. 
  2. Wash the zucchini and dry. Cut in half lengthwise. Scoop out the insides with a spoon. Place skin side down in a casserole dish. Sprinkle with salt, pepper and garlic powder. 
  3. Mix together the mozzarella, cottage, and ricotta cheeses. Add the chopped kale, mix to combine. 
  4. Scoop the mixture evenly in the zucchini boats. Top with marinara and parmesan cheese. 
  5. Cover with foil. Bake for 30 minutes. Uncover and bake for an additional 5 minutes. You could also broil for a few minutes to brown the cheese (recommended).
